It's the beginning of November 2025 and my opportunity to discuss news and information that has come out in the past month with Ellen Bayens of theceliacscene.com. Ellen keeps us up to date on what's happening regarding celiac disease and gluten free. First, let me urge you to sign the petition Celiac Canada is putting forth to the federal government regarding the cost of gluten free food and how they can assist the celiac population. This is a re-issue of the petition from last year, as unfortunately it died when an election was called. Last time we received more than 26,000 signatures. Let's try for 30,000 this time. Melissa Secord from the CCA was part of a Canadian "team" attending who did a great job presenting and interacting with experts from all over the world. We touched on research regarding a promising advancement in testing for celiac disease by a simple blood test. We also speak about research to try and "turn-off" the celiac switch and learn more about that. We learn why some people who think they might be celiac, might instead need to be on a temporary FODMAP diet to reset their digestive system with the help of a dietician. We spent the next night in Kamloops, and I was lucky enough to have pizza left from lunch, so that filled the spot for dinner. In the morning, we headed towards the ferry terminal south of Vancouver for the ferry to Victoria at 3pm. I wanted to get to the ferry early, which was a good thing as we met so much traffic leaving for the mountains for the long holiday weekend. I decided to get another taco salad from Wendy's and enjoyed eating it while in the line for the ferry. We arrived on Vancouver Island and drove to our hotel in downtown Victoria. I decided on an Indian restaurant a few blocks away called Sizzling Tandoor reported to have lots of gluten free options. They did, and I thoroughly enjoyed butter chicken, rice and poppadums which are thin chips usually made from lentil flour that are a great substitute for bread if they are made gluten free. I have been looking forward to the next morning for so long. It was my opportunity to finally meet Ellen Bayens of theceliacscene.com whom I have been friends with for years but never met. Ellen made reservations for us to have brunch at one of her favourite restaurants – Six Mile Pub. We sat in the cozy gazebo on the patio, met with the chef and had the best gluten free meal I can remember. We asked the chef for three different dishes, and we were treated to creative steak & eggs, poached eggs and pancakes. Although they sound simple, these dishes were works of art and I savoured every bite. There's nothing better than sharing an amazing meal with a good friend. Ellen and I could have talked for hours, but Trish and I had to be on our way heading for our final destination of Comox. Ellen suggested we stop at the town of Ladysmith along the way to visit The Wild Poppy, a gluten free bakery. What a treat – I bought a massive blueberry scone, date square and butter tart. I'm so spoiled. After arriving in Comox, Trish's boyfriend met us, and we decided to try a burger place Ellen has raved about. The Big Wheel is worth the hype – no flax in the GF hamburger bun and a separate fryer – Perfect! We've settled in here for a few days until I fly back to Ontario. Now I can try the gluten free options in Comox – more treats to come! I've loaded some pictures on my blog. I'm excited to introduce you to a program from the Canadian Celiac Association directed towards those individuals newly diagnosed, their family and caregivers, along with others needing a refresher on the gluten free diet. Nicole Byrom who is a Registered Dietitian working with the CCA, is back on the podcast to tell us about the Newly Diagnosed Pathway. This program is a curated collection of emails that contain different resources and are sent on a periodic basis to educate and inform those who have signed on to the pathway. Nicole mentioned the CCA website, www.celiac.ca; the information email address, info@celiac.ca; along with the helpline phone number (905) 507-6208. On this episode I'm speaking with a co-host from my other podcast, Gluten Free Weigh In. Aaron has been diagnosed for about one year and I wanted to speak to him about being a man with celiac disease. Overwhelmingly, most celiacs I've known are women. We talk about why more men aren't seeking diagnosis, as well as how most of the resources available are directed towards women. Aaron is in a unique position to discuss this subject matter with me, not only because he's a man, but he is also a behaviourist, with a Master's degree in Behaviour Education. Aaron is very animated and honest and will almost certainly challenge some of your perceptions of living with celiac disease. On this episode I speak with Derradji Zaarer who lives in Algeria. Derradji has Dermatitis Herpetiformis or as we often refer to it as "DH". DH is essentially celiac disease of the skin. Diagnosis for DH is often straightforward, as the tiny blisters are usually in symmetric distribution, meaning that if you have them on your left elbow, you will also have them on your right elbow, or wherever else they appear. Derradji faces many challenges with his rare condition including the availability of the medication normally prescribed. The limited availability of gluten free food is also something that makes dealing with DH in Algeria very difficult. With all he is facing, Derradji is doing his best to connect with other DH patients as well as celiac patients both in his country and in other places. This episode is my recurring opportunity to weigh in on information Ellen Bayens published on theceliacscene.com during the past month. The challenge of finding safe french fries in restaurants is one that every celiac encounters, so Ellen and I both give our take on the subject. We talk about the recent recall for M&M Foods along with their gluten free policies. Island Farms, a dairy on Vancouver Island has recently decided to NO LONGER make their ice creams gluten free, so we look at the impact on the community. An informative long-term study out of Norway looks at detecting celiac disease in the general population over time. Arsenic, mercury and lead are all undesirable in our food, and the gluten free diet poses a greater risk of these substances showing up, but there are steps you can take. We are all familiar with celiac disease, but do you know what makes either a wheat allergy, or non-celiac gluten sensitivity different? The Canadian Celiac Association is requesting you take part in a survey – here's the link - "State of Celiac Disease in Canada". The CCA has recently launched a program to help the newly diagnosed. Two weeks in August was the culmination of a many hours of work by dedicated volunteers to make Camp Celiac 2022 happen. I was a member of the Menu Committee and along with others we worked and re-worked a menu for the camp that would be exciting for celiac and non-celiac kids alike. The force behind camp celiac is Carmen, a member of the Ottawa Chapter of the Canadian Celiac Association. Carmen spent the most time of the two weeks at camp. I, and a few others were there for designated days. Once the hard work of the menu was completed, we reached out to gluten free food partners to supply some of the specialty food. Our food partners were amazing with their donations, that allowed us to present meals that were enthusiastically enjoyed by all. During my recent conversation with Ellen Bayens of theceliacscene.com, she introduced me to Karen Joseph who works for ASSE, an international student exchange program based in the US. One of Karen's responsibilities is to find host families for incoming students who require a special diet for health needs. Karen is uniquely qualified for this task as she is the mother of a now adult son with Type I Diabetes and Celiac Disease. She understands the gluten free diet and spoke to me of the importance of finding host families who are prepared to support a student with celiac disease. Karen has lots of stories of the students she has placed and how they made the gluten free diet work for them in a new country, hosted by a new family. We left Regina on a nice sunny day and headed west. We stopped at Wendy's (again) for lunch, but this time I had the taco salad – without the corn chips as apparently, they aren't safe. You get a nice salad, a good portion of chili and some salsa. I poured the chili on the salad and thoroughly enjoyed my lunch in the car. Cinde Little, the Everyday Gluten Free Gourmet was very kind to invite us for dinner at her home in Calgary that evening. She made a menu card especially for us. All the recipes came from her blog everydayglutenfreegourmet and they were delicious! Cinde even served edible flowers from her garden with the dessert and sent me home with a goodie bag! Here's the menu links – Adobo Chicken We were actually staying in Airdrie, north of Calgary. We left from there to travel west through the mountains on our way to Kamloops for our next hotel stay. We looked ahead to find a restaurant that might suit as we are travelling with our small dog. We decided on The Turning Point in Golden BC. What a great find – they even had a doggie patio! They had two kinds of gluten free pizza – one had flax, so I was thankful there was another choice of a cauliflower crust pizza. Their pepperoni wasn't gluten free so I opted for a ham and pineapple with onions and green peppers – Wow, it was amazing and I had enough to bring along with us to heat up later for dinner. Tomorrow we take the ferry to Victoria. I've loaded some pictures on my blog. The beginning of September means I have the opportunity to chat with my friend Ellen Bayens of theceliacscene.com. On this episode we talk about strategies for parents and teachers to be on the same page about the celiac student and their needs during the school year. Ellen has some great suggestions. We also talk briefly about a student exchange program and the person in charge of the special diet requirements. I hope to speak with her about this interesting topic on a separate podcast very soon. In science news, researchers have come up with a tool to help doctors determine the risk of celiac disease to some of their youngest patients, and it turns out the gut microbiome has lots more to tell us, and this time it's about the very specific differences in the small intestine, depending on where the same of the microbiome was taken from. These advances in science will hopefully mesh together to allow for a better diagnosis rate in the future. I'm thrilled to speak with Ann Campanella about her book Celiac Mom. Ann's daughter was diagnosed at the age of 5 many years ago. Ann reflects on her struggles as a parent of a celiac. Her flair for story telling is often vivid and pulls at our heart strings. Being a parent of a celiac child, we often find ourselves very protective. This approach can take many forms, so each family's story is different. Ann draws us in with the detail that I'm sure her daughter has long since forgotten, but stays with parents as they navigate these troubled waters. On this episode I speak with Ellen Bayens about articles, topics and science that has been published over the past month about celiac disease and the gluten free diet. We talk about why a new drug treatment study was abandoned in the Stage 3 phase, as well as research into how science will eventually tackle and treat celiac disease. Artificial intelligence is being prepared to help doctors diagnose celiac disease - with 300 symptoms and normally many years of testing prior to diagnosis, this new tool may change the diagnosis landscape. Mental health is in the news these days, with the stress of covid and the economy, and a recent study has looked at the rates of anxiety, depression and ADHD in the celiac population, particularly in youth. Dr. Diane Mager of the University of Alberta is heading a team researching the specific dietary needs of children newly diagnosed with celiac disease. They are reaching out to the community for participation in two studies, one for children and families and the other to find family friendly recipes to use as part of their resource package. Ellen had the tale of two restaurants, one that had gluten free items on their menu, but they are not actually gluten free and safe for celiacs, and the other restaurant that is going to great lengths to ensure their many gluten free offerings are safe for us. As a follow-up to Episode 148 I speak again with Dr. Diana Mager from the University of Alberta as she and her team have formulated a gluten free food guide for children that more meets their specific needs. Currently they are recruiting families of newly diagnosed children (less than one year, and between the ages of 5 and 18) to participate in a study to look at the effects of the enhanced food guide. Participants will be given one-on-one education and other resources regarding the nutritional needs of children with celiac disease and how those needs differ from the general population. Christine was an elite speed skater who won numerous medals for Canada over a very distinguished career. After many years of suffering unexplained digestive issues, Christine was diagnosed with celiac disease. She explains how her diagnosis effected her skating, her travelling and being a part of a very competitive team. Christine's story is rich with reminders that celiac disease can be controlled and shouldn't stop us from accomplishing anything we're willing to put our best effort towards. On this episode I'm at the Gluten Free Garage, which is large food show in Toronto. I've attended the show previously with the podcast, but this year, I was helping at the booth for the Canadian Celiac Association. The CCA booth was a place for attendees to drop off gluten free food donations. This is something that was done in previous years by Jessica Danford, but she wasn't able to be at the event this year, and the CCA was happy to help. I took the opportunity at the food show to speak with some of the interesting people I met. I speak on this podcast with Ellen Bayens of theceliacscene.com about the articles, studies, and interesting stories she has presented to us this past month. We spoke about a family who had one child suffering with IBD and a second diagnosed with IBS. This conversation became about the differences between the two conditions and how the diagnosis and treatment of IBS and IBD have advanced substantially over the past decade. On the subject of children, we looked at the benefits of having support systems within the celiac community not only for celiac children, but also for the parents of celiac children. This support is important, soon after diagnosis, as well as on an ongoing basis. A recent study to find a biomarker that would be able to measure how children were responding to a gluten free diet led Ellen and I to a discussion of using or mis-using TTG numbers to indicate healing and the adherence to the gluten free diet. Ellen put in a special word for Michelle, of Michelle's GF Kitchen as during May she was working with the Edmonton Chapter to help with ideas for some gluten free meals. As always, Ellen and I speak about food, and on this occasion, it was gluten free fish and chips and why they cause such a stir in our community. I received an email from a listener of the podcast who gave me more current information about a labelling issue I got wrong on a previous podcast. We all make mistakes, but if we can come away with the correct information, we're all better for it.

We arrived in Winnipeg in plenty of time to settle into our hotel and go to Montanas for dinner. I've eaten at Montanas a number of times and always get the ribs with Texas bold sauce and a baked potato with butter – very yummy! I had my last sandwich on the road which worked out well as there aren't many places for me to have a hot lunch on the Trans Canada Highway between Winnipeg and Regina. Once in Regina I was excited to go out for fish and chips at a very busy sports bar/restaurant called 4 Seasons. The owner's wife is celiac and they have an extensive gluten free menu. My fish was wonderful and I was offered gf gravy to go with my chips which was a real treat. We ended up staying longer in Regina than expected to get a small thing fixed on the car. We went to the science museum and ended up at The Lobby restaurant for a chicken Caesar salad for lunch – one of the best I've had! We finished the night with chili and a baked potato from Wendy's – always good and filling. We're leaving in the morning to get to Calgary where I've been invited for a very special dinner with a friend of the podcast – so looking forward to it. I've loaded some pictures on my blog. Iron deficiency or anemia is more complicated that I realized. The Canadian Celiac Association recently presented a webinar on celiac disease and iron deficiency. Dr. Frances Scully gave us information on the treatment of iron deficiency, along with other medical and scientific information. Nicole Byrom, Registered Dietitian with the CCA spoke about how iron deficiency related to celiac disease and its symptoms, as well as changes we can make to our diets to increase our iron intake. We also heard from Malorie Otton, who was diagnosed as a young adult with iron deficiency, that led to other complications and was her main symptom prior to her celiac diagnosis. I was able to attend the second webinar presented by the CCA during the month of May, Celiac Awareness Month. The subject of this webinar was IBS and Celiac Disease. There were two very engaging speakers, and I had the privilege of speaking with both of them for this podcast. Meghan Donnelly is a Registered Dietician who works for Dr. Schar, as Senior Manager of Nutrition Services. We know the company as Schar gluten free. Megan works with individuals who could benefit from a specialized diet. She has worked with many patients who are celiac, as well as those who have IBS. She explains the low FODMAP diet, which is meant as a resource to identify specific foods that may be causing IBS symptoms in the gut. Megan explains the process of working through the diet as well as other forms of dietary treatment. Megan has some great slides in the webinar. The link is below. Dr. Maria Ines Pinto-Sanchez is the Lead at the Adult Celiac Clinic at McMaster University's Farncombe Digestive Disease Centre. Dr. Pinto-Sanchez gave a great description of both the similarities and differences in both the presentation, testing and treatment of IBS and Celiac Disease. I speak to her about the patient journey when presenting with symptoms that could be IBS or Celiac. She very well defines the differences of how the gut is affected in both conditions. There are some great slides and charts in the webinar presentation that illustrate these differences. The CCA presented a webinar the first month of May, Celiac Awareness Month, about Neurology and Celiac Disease. Nicole Byrom introduced the two guests for the webinar, and now, I have been able to record a podcast with both of them. I first speak with Sonia Jones, who was also featured in an article in the Canadian Celiac Magazine. He is not a medical doctor seeing patients, but during the course of his research, he has studied the brains of many people with celiac disease, gluten intolerance, and gluten ataxia. It's time again to chat with Ellen Bayens of theceliacscene.com. Ellen brings us great articles and tidbits about celiac disease and the gluten free diet all month long and this is our opportunity to discuss. First, we talk about an article that tries to define the differences between food allergies, intolerances and sensitivities – it's a big and somewhat confusing job. Easiest to note that Celiac is none of the above, but many of us have an allergy, intolerance or sensitivity in addition to celiac. Have you ever wondered what xanthan gum is exactly? I had not, until Ellen raised the topic. You might be surprised at what you learn. Recently, Health Canada re-vamped their sign up for food and other recalls. Ellen gives us a summary of the changes and how the new process is so much easier. Ellen highlights the Tuesday questions answered by Selena DeVries RD on Instagram. I've been working on a bit of theme lately looking into different aspects of food security as they relate to those on a gluten free diet. On this episode I speak with Cinde Little the Everyday Gluten Free Gourmet. Cinde has a tremendous website with lots of great ideas for main dishes, side dishes, salads and desserts. The photos on the website make everything look delicious. Cinde talks us through some of the strategies she uses to save on meats and vegetables. Planning seems to be the key. Planning also includes eating foods when they are in season. This sounds logical, but we often have to think ahead to do that. We also talk about how to take an inexpensive pasta meal and make it special with some simple additions. Many of us are not very adventurous when it comes to blending ingredients and tastes. Maybe that comes from trying to keep our diet simple to make sure it's gluten free. Cinde gives us lots of ideas to switch things up and make inexpensive meals more exciting. The topic of Food Security is one that I speak about often with others in leadership roles in Canada's gluten free community. I thought I'd bring some of those conversations to the podcast. First, I speak with Jessica Danford who has devoted a great deal of time and energy into getting gluten free food into the hands of those who need it, but are not able to afford it. Jessica explains how to work with food banks and some of the complications they might be facing. Jess was recently featured as an author in the book "She Moves Mountains", which can be purchased at most book sellers. You can also connect with Jess on Instagram @Jessicadanford. I also talk about Bev Ruffo, who is from the Hamilton area. There is no longer a CCA chapter in Hamilton, but Bev still keeps in touch with some of her celiac friends and they decided to get involved with gluten free food collection. They even appeared at the recent Gluten Free Goodness Expo to accept food donations and have attendees sign a petition for the CCA – well done! I round out this episode with a discussion about the extraordinary efforts being made by the Manitoba Chapter of the CCA. The President of the Chapter, Christa Dubesky, tells me how their group got involved with a food bank umbrella organization to prepare hampers for the gluten free clients. Not only did they prepare hampers, they took on the job of getting donations, for most of the food. Ellen and I have a discussion about bloating – something that was never really a symptom for me, but as a symptom it should be talked about more. Ellen tells us of the recent product recall from Cavendish Farms, along with details of the new non-gluten status of Earth's Own oat beverage. We left Sault Ste. Marie in an intense thunderstorm, and rain and wind stayed with us on and off for the next couple of days. Our drive to Thunder Bay was very scenic, but so many trees and so much wilderness. Not many places to stop – I was glad I had my cold cuts and buns with me for lunch. Once we arrived in Thunder Bay the restaurant I had picked out was a short walk from our hotel. It was a Mexican restaurant called Nortenos Taqueria. I got the Beef Birria – it was so yummy I started to eat it before I took the photo (there were originally 3 tacos). This restaurant has a gluten free fryer! We stopped and took a photo with The Big Goose near Wawa (it was very windy). We also drove by the longitudinal Centre of Canada – I never thought this was a thing, but it's cool to think I was there. Our next stop was in Winnipeg. I've loaded some pictures on my blog. I'm welcoming back to the podcast Dr. Melissa Ing who is a well accomplished dental educator with a specific interest in celiac disease. Dr. Ing shares with us the information she presented in two lectures at the recent Chicago Midwinter Conference. Her first lecture was titled "Celiac Disease, Non-celiac Gluten Sensitivity and Your Dental Patients". The second lecture was about nutritional influences on oral and systemic wellness. Melissa is very much into the "Mouth-Body Connection" and teaching a whole-body approach to dental professionals. In 2020, Melissa put together articles she wrote for the CCA's Better Living Gluten Free Publication on Oral Health. Ellen Bayens of theceliacscene.com has given us some great articles to look at this month. Somehow, she found an article written on the issues of cross contamination in restaurants in Malta. It's amazing to see that celiacs in another part of the world with a very diverse cuisine from ours have the same issues ordering food in restaurants. As well there is an interesting study that was done recently looking at the blood tests done with children and how indicative they are of a final diagnosis of celiac disease. The aim of this study is to identify a benchmark level for blood tests that would indicate a biopsy for a child is not necessary. We discuss the curious issue of Novak Djokovic, the international tennis star who has publicly said that he is on a gluten free diet for his health. There is more behind this story, and much of it will leave you with more questions than answers. Are you familiar with the FODMAP diet? Ellen explains the premise of the diet and how it is being used by some celiacs who are struggling to gain remission from their symptoms. In Episode 93 of this podcast, I interviewed Steven J. Singer, who runs Fody Foods, helping those who are using the diet as a tool towards better health. Ellen gives us more information on how you can post questions on Instagram for Selena DeVries @celiac_dietitian. As well Selena offers a focused Facebook group for those with persistent symptoms, along with courses and assistance on her website www.healthbean.ca. The topic of food bullying is a broad one and means different things to different people. To help me tackle with subject, I invited Nicole Byrom, Registered Dietitian with the Canadian Celiac Association to discuss food bullying in the context of the gluten free diet. The act of making someone feel bad for the food they are eating often comes from a place of ignorance about celiac disease and non-celiac gluten sensitivity. Education can be a key factor in your response to a food bully, but issues get more complicated depending on who is the being bullied and who the bully is. Children often face negative comments on their food when away from home and adults often have negative interactions with family members, or they are seen as being needy and high maintenance. Nicole is able to put food bullying in perspective with tips and strategies to empower you or your chid. On this episode I speak with Kendra, the human who trained Suki to be a Gluten Detection Dog. Kendra speaks about how Suki was trained to alert her if any food, drink or medication contains gluten. Kendra trained Suki during Covid, and although Suki is ready to accompany Kendra into restaurants, stores and on public transportation, the training is ongoing. Kendra takes us through some of the interesting instances when Suki was able to detect very small amounts of gluten, which Kendra would not have been able to detect from ingredient lists. At the CCA's recent virtual conference, Nicole and Caleigh presented the new CCA Labelling Guide, which, although there have not been new regulations on gluten labelling, clarifies many of the questions Nicole and Caleigh regularly receive. We talk about the term "may contain" and levels of risk involved in certain labelling terminology used in Canada. We left the Kingston area with a very full car for our trip to Vancouver Island to relocate my daughter. Our first night stop was in North Bay. We got takeout from Boston Pizza, which I always enjoy. Then after a good night's sleep our next stop was the Big Nickel in Sudbury – very cool! A friend recommended a gluten free bakery to me that was in Lively, west of Sudbury called Gluten Free Galore, but also goes by the name Amici. I bought white bread, two cupcakes, date squares, and sandwich buns which we put to good use for a picnic along our route. Our dinner was at a restaurant called La Anh (formerly Sunset Noodle House) – Yum. I've loaded some pictures on my blog. On this episode I speak with Melissa Secord, Executive Director of the Canadian Celiac Association to bring us up to date on recent relevant news items. We look more into how the CCA worked with the Ontario government to inform the Ministry of Health about the advantages of covering the cost of the celiac blood panel for the purpose of diagnosis, and the pilot program that has come from those efforts. Recently, a story about a celiac woman held in travel quarantine made the national news as she was denied a gluten free meal for 40 hours. The CCA got involved to help the woman and bring more awareness of this unacceptable situation. Melissa and I also talked about the labelling of "natural" products, including supplements, and natural treatments. Until now, these products did not require labelling that would identify sources of gluten and recently, the CCA has been working with Health Canada to change the regulations.
